The Best Blondies

Ingredients
- 240 grams all-purpose flour
- ½ teaspoon baking powder
- 1 teaspoon kosher salt
- 151 grams unsalted butter, melted and cooled
- 373 grams packed light brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 1/2 cups chocolate morsels – I use a mixture of mini semi-sweet and milk chocolate
- ¾ cups sweetened shredded coconut (optional)
Instructions
1. Preheat oven to 180 degrees C (350 degrees F). Line a 13x9-inch baking pan with foil or parchment and spray with non-stick cooking spray.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large bowl, whisk together the butter and brown sugar. Add eggs and vanilla, mixing until well combined. Gradually add in dry ingredients and mix until just combined. Stir in chocolate morsels and coconut.
4. Spread the batter into the prepared pan. Bake in preheated oven until a toothpick inserted in the center comes out clean, about 25-30 minutes.
5. Cool in pan completely before cutting
